Penhoet Toyon Farm feels like a secret world, hidden by moss-furred oak trees in the foothills of the Mayacamas. The neighboring properties are some of Carneros’ best known vineyard sites, but owners Ed and Camille Penhoet bought the land to run a dressage barn. Stunning horses are everywhere, watching over the vines. Every time I visit, I make sure to take a moment to soak in all of its beauty.
The site has an unusual volcanic tufa substructure, and nearly 20-year-old Chardonnay vineyards planted with the Old Wente clone. That clone’s natural minerality and bright acidity let us create a French-driven California expression of the grape. California Chardonnay can often fall into to a category of caricature, and my goal is always to find balance. Supple fruit, restrained oak, flint and minerality, all in harmony.
